Homemade Salmon fish cakes

ImageForget Jamie Oliver this is an Aimee (Oliver) 30 min meal (lol) I didn’t actually time it but it was super quick, So quick that I managed to get in and cook it before my Boyfriend even knew I got in from work!! Its a very simple, fresh, spring recipe, as the evenings get brighter so does the produce that’s available to us.

Fish Cakes- makes 4 patties

  • 2 Salmon Fillets
  • Half Red Chilli
  • Juice of a Lime
  • Teaspoon garlic butter
  • 1 Cup Almond Flour
  • Tablespoon Soy Sauce
  • Salt/Black Pepper

Roast Veg

  • 2 Yellow Peppers Quartered 
  • 2 Red Peppers Quartered
  • 6 Tomatoes Quartered
  • Small Bunch Fresh Coriander Finely chopped
  • 4 Garlic Cloves Crushed
  • Black Pepper
  • Olive Oil

1. Preheat oven to 180, place all the Ingredients for the roast veg in a large roasting tin in an even layer, Bake for 20-25mins.Image

2. For the fish cakes, put everything except the almond flour into a blender, blend until you get a pink paste, remove the mix and put in a bowl. Dont be put off by the texture or what it looks like! In a separate bowl pour the almond flour in.Image

3. Make patties and roll in the almond flour, keep rolling until they’re evenly coated, they may lose shape but the more almond flour used, the better the consistency & this will allow you to shape them better before they go in the pan. When there is 4 done, heat some oil in a pan,wait until its very hot before putting the patties in, Keep flipping until they are crispy all over,this should take about 10 minutes. The veg will be ready at the same time so you can plate up immediately. I included spinach as an extra but include whatever is available to you.
