This is a recipe I did back in March for St Patricks day. Its sweet, its minty, its chocolaty and its Paleo!!! The only problem here is you may eat them all yourself, my excuse was I had to taste them to make sure they were ok to eat, it just took a lot to make that decision 😀 😀 Finally a Paleo treat for anyone with nut allergies!!
1/4 Cup Coconut Oil
1/3 Cup Honey
1 Teaspoon Peppermint Oil
Half Bar 80%-90% Dark/Raw Choc
1. In a bowl mix coconut oil, honey & peppermint oil until it becomes a smooth paste, if its not mixing, using the back of a spoon press the coconut oil down as this will smooth out any lumps.
2. Put the mix in the freezer for about 10-15mins, check it in between-its should be a bit hard but not frozen.
3. Use a teaspoon to scoop the mixture out into little balls. On baking/parchment paper, put each one down & press slightly to flatten. After all the mixture has been measured out- put them in the fridge while you melt the chocolate.
4. When the chocolate has melted, take the patties out and dip each one in the chocolate until they are evenly coated, put them back in the fridge for about 20 minutes before eating.
Note: They melt REALLY quickly so if you need to transport them it may be a good idea to freeze them for the 20 minutes.
