Paleo/Gluten Free Carrot Cake




A lift in weightlifting in which the weight is lifted from the floor to the level of the hips and then lowered by controlled effort to the floor.


Today I reached a Goal that has been out of my reach for about a year now, explained above a deadlift is a weightlifting move used in Crossfit and today I hit a personal record of 100KG. I can’t explain how happy I am to achieve this, If someone told me a few years ago, that I would doing weightlifting with this type of weight I would have told you get your head checked ha ha!!! But here I am & as a celebration here is a recipe for a healthy Carrot Cake.

  • 1 & 1/2 Cups Grated Carrot
  • 1 Cup Almond Flour
  • 1/3 Cup Honey
  • 2 Eggs Whisked
  • 1/4 Cup melted Coconut Oil
  • 1/4 Cup Chopped Walnuts
  • 1/4 Cup Shredded Coconut
  • 1/3 Cup Almond Flakes
  • 1  Tablespoon Vanilla Extract
  • 1  Tablespoon Cinnamon
  • 1  Teaspoon Ground Ginger
  • 1/2 teaspoon Baking Powder
  • Pinch of Salt

For the Icing-(I discovered how to make this at a Raw Food workshop & you don’t need cake to enjoy this, its even delicious on it own!!!)

  • Coconut cream- Open a tin of full fat coconut milk without shaking-All the cream will be at the top away from the water, use a spoon to remove the cream.
  • Cup of Raw Cashews soaked for 1 hour
  • 2 Tablespoons of Honey
  • 1 Tablespoon Vanilla Extract
  • 1/2 Cup Coconut water or milk

1. Preheat Oven to 180

2. Separate Wet & dry Ingredients (Except Nuts & Carrot) -Mix Wet into dry until combined, stir in grated Carrot, then Nuts.

3. Place the dough into a greased, bread tin & Bake for 20-25 Minutes.

4. To make icing- Add cashews to blender first and blend until you get a cashew meal, then add the coconut cream and blend again. Slowly start adding the coconut milk/water & its should start looking like a paste, then add honey & Vanilla. Pour into bowl and put in the fridge until required.

5. When the cake is done, remove from oven & allow to cool. When it has fully cooled, you can now ice the cake. Use some leftover walnuts as decoration on top.
