I think we can all say that fish fingers were a big part of our childhood diets! I know I would have eaten them a lot. The idea came about after I made some paleo chicken tenders and decided to replicate the idea for some healthy fish fingers.
This is such a simple and quick snack, also great for Children who are Coeliac.
- 2 Fillets Cod
- 1 Cup Almond Flour
- 1-2 Eggs
- Fresh or Dried Parsley ( If using fresh finely chop)
- Zest of Half a lemon
- Sea Salt
1. Preheat Oven to 180.
2. In a small glass bowl whisk the eggs & in another bowl add almond flour, parsley, lemon zest and salt- lightly mix with a fork until all ingredients are evenly combined.
3. Slice the cod in to strips and dip in the egg first and then roll them in the flour mix.
4. Transfer to the baking sheet and bake for 20 mins until golden.
