Paleo Brownie Cupcakes with Lime Dark Chocolate Topping


This one goes out to all the chocoholics of the world!!

I couldn’t help but smile when these were finished, they looked so pretty and not at all like a Paleo/Gluten free treat!! My willpower is taking a beating today lol!!

The idea popped into my head after I made the Carrot Cake Cupcakes for Halloween, since I adore chocolate it only seemed natural to do an all out Chocolate version!!

Ingredients:(Makes 12)


  • 1 Cup Almond Flour
  • 2 Tablespoons Coconut Flour
  • 1/3 Cup Raw Cacao Powder
  • 1/4 Cup Cocoa Nibs
  • 1/4 Cup Desiccated Coconut (optional)
  • 1 Teaspoon of Baking Powder
  • 4 Eggs
  • 1/4 Cup Honey
  • 1/4 Cup Coconut Oil
  • 1 Teaspoon Vanilla Extract
  • Pinch of Himalayan Sea Salt


  • 1 packet (approx 1 Cup) of Coconut Cream
  • 3 Tablespoons Raw Cacao Powder
  • 1/3 Cup Honey
  • 1 Teaspoon Vanilla Extract
  • Zest & Juice of 1 Lime


1. Preheat the oven to 180.

2. In a large bowl combine all the dry ingredients-In a 2nd bowl/jug-combine all the wet ingredients and mix with an electric whisk until it foams up. Then pour the wet ingredients into the bigger bowl, mixing at all times until you get a yummy chocolaty batter.

3. Scoop the mixture into silicone or paper lined muffin tins and bake for about 12-15 mins. When they’re done put aside for an hour to fully cool down.

4. For the topping- Melt the coconut cream in a bowl over hot water or in the microwave it should only take about 1 minute.

5. In a large bowl, Using an electric whisk- Combine the coconut cream, cacao powder, honey, vanilla and lime juice/zest until it it mixed well. Place in the fridge for about 5 mins to set slightly, then in a piping bag- spoon the entire mixture & decorate the cakes, I sprinkled some cocoa nibs and coconut to finish.
