Today is the start of a 4 Week Paleo Challenge we do annually at Ronin CrossFit, it’s a great way to get focused and start the year on a positive note! I make jokes about how awful it’s gonna be and how much I’m gonna miss this or that but the truth is I am really happy, After being more Piggy and less Primal over the Christmas, it’s a great way to get back on track in the New Year…
The great thing is this is a group event, so if you feel like you’re having a weak moment, you have a personal support group on hand to help you out, we share highs and lows and at the end we all get rewarded because we feel incredible!
I will be sharing details of this challenge with you all over the next 4 Weeks and I’m interested to see what I will find the hardest, I took an extra jump and decided to say goodbye to Coffee aswell, I’m on day 2 of no coffee and not finding it too bad but this could all change, I’ll keep you posted 🙂
A great alternative I found to my daily Coffee is this tea, it’s so tasty and doesn’t lack in any flavour, if you are buying herbal tea do spend a little extra money, some of the cheaper brands can be bleached or attached with Glue which is not good and they don’t taste that nice either, when you buy a certain flavour you want that taste not a bland watered down version! This Yogi tea is about €3 from Holland & Barrett:
And onto a delicious Breakfast/Brunch: Carrot Fritters
-5 Carrots Peeled & Grated ( I used 2 orange, 2 yellow & 1 purple- grated in Food Processor)
-4 tablespoons of Almond Flour
-Small bunch of Fresh Parsley (Chopped)
-Salt & Pepper
1. In a bowl break the eggs and add the almond flour, one tablespoon at a time- mixing with an electric hand whisk, when it resembles pancake mixture, season with salt & pepper and add the carrot & parsley. (Add enough of the mix until all the carrot is covered and there’s not much liquid left)
2. Melt some coconut oil in a pan & fry the fritters for a few minutes until each side is golden, push down a couple of times to get any excess liquid out and once they go crisp they are ready.
-Add a pinch of ground ginger for some heat
-Swap parsley for coriander
-Swap the carrots for courgettes
-Crumble some feta cheese in
