Why The Whole “New Year, New Me” Is B******t!

As we roll into a new year, it’s a great time to make plans and set goals for the year ahead. Keeping that in mind, get ready for your social media to be blasted with the whole “New Year, New me” saga and DON’T even get me started on those 8 week challenges!

Let’s take a step back here and look at the big picture, why the hell are we wanting to change who we are? Last time I checked I was pretty happy with little old me, warts and all-(I hope you are too!) Without even knowing, people are already putting pressure on themselves because “this is year that it’s going to happen-I’m going to lose a ton of weight in the new year and my life will be perfect!” When the seed is planted it usually starts with the person doing serious damage over the Christmas holidays and then restricting themselves 100% in the new year! “Hello misery!”

I’m all for people making positive steps to achieve overall mental and physical health but these plans you’re being sold don’t actually help with any of that long term (unless you are working with a qualified professional of course-do your research!). Yes, you will lose weight but is it sustainable? And how happy will it actually make you!

It’s taken me a long time to really be happy in my own skin and I feel it’s my prerogative to help others because that place can be dark. I too used to be that person who said I’ll wait until the new year to lose a few pounds, I too started the new year cutting out all the food groups under the sun trying to achieve that and guess what? It sucked, not only did it suck, a few months later when I started eating all those forbidden fruits, I had failed (or so I thought!).

I’m not a negative person so don’t see this as a negative post, every year is a new beginning, it’s exciting and fresh. Every new year is a year to better yourself from the previous but please be mindful with your goals. Set realistic goals, year long goals, lifetime goals, it’s not a sprint people! Achieving a healthy body and mind permanently takes times and if you are willing to invest in yourself then changes will happen.

January can be a daunting time on social media as everyone seems to be shouting about some kind of diet or new training plan, don’t waste your energy trying to mimic someone else’s goals, again bring it back to you and push forward! Social media can be a great place too- those rough days when you need inspiration/motivation to get to the gym or for meeting like minded people who share the same passion, a support group if you will!

Enjoy each day and don’t stress thinking about the finish line. Enjoy the process, learn and grow!

I wasn’t planning on blogging until the new year, but just wanted to throw out a positive message as we close off this chapter! I wish you all magical, positive vibes for 2017 and thanks to everyone who supported me to date, you rock!! I’d love to hear about your goals and plans for the new year so don’t be strangers!

10 Ingredients You Should Always Have In Your Kitchen

Eating healthy shouldn’t be a chore and it certainly doesn’t have to be expensive. I believe it only get’s expensive when you start buying all the Gucci stuff. I remember buying all the ingredients in the world just to make some paleo treats but it’s not necessary. We don’t have to over-complicate recipes, less is more sometimes! It’s taken me quite a while to register that and to be honest I follow a simpler way of eating now. There’s no secret we know what’s good for us and what’s not, if you’re hungry, eat and if you’re not, Don’t!

With some basic ingredients, you will always have the framework for healthy meals or snacks reducing the cravings for any junk food. It’s not a definitive list but I always keep these 10 ingredients fully stocked, everything else can chop and change but these are staple foods.

#1 Avocado

Because it literally goes with EVERYTHING! Mashed on toast, soulmate of eggs, smashed with squeezed lime, salt, pepper and chili flakes for a super speedy guac and did I say everything?

#2 Eggs

NEVER allow yourself to run out of eggs they’re a life saver for all meals and are a great natural source of protein (and they wonderful of course). Without eggs there would be no pancakes, breakfast would be unsatisfying and avocado toast would be very sad.

#3 Sweet potato

Mashed, grated, baked, fried so many great ways to add to any meal for a healthy source of carbs. The great thing is they cook pretty quick so perfect for post training fuel. If you fancy something sweet you can even try sweet potato brownies!

#4 Spinach 

If it’s good enough for Popeye? Adding something green to every meal ensures you get all the great nutrients that come with it! The base for your salad, work well with eggs and add to smoothies for those extra gains!

#5 Oats

Fuelling beefcakes since the 1900’s! The ultimate pre/post training food, you only have to scroll through your Instagram feed and you’ll see a zillion bowls of the stuff. An essential ingredient for energy balls, protein pancakes, healthy bread and makes a great coating for breaded fish/chicken.

#6 Almond milk

Even though I do take dairy milk occasionally, I always buy almond milk. I prefer it in my porridge or in my smoothies.There’s no saturated fat in almond milk, It’s low in sodium and high in healthy fats. Get all the great benefits by making your own, as some shop bought versions only have about 7% almonds in it!

#7 Greek yogurt

I actually don’t think I could function without my daily injection of Greek yogurt. It’s the perfect food and works in sweet and savory meals. My go to snack is yogurt mixed with protein, usually before bed. I always add it to my smoothies, overnight oats, a replacement for cream and even in hot curries! My favourite brands include Fage, Glenisk and SKYR. (not an #ad)

#8 Bananas

It’s very rare that I ever run out of bananas, they are a life saver when you need something sweet or as a handy snack. Bananas are made to be eaten with peanut butter, my go-to snack is simply bananas cut into coins and spread with peanut butter. Freeze them, and you have ice cream, I mean anything that you can turn into ice cream is good with me!

#9 Peanut/Almond butter

Do I really need to explain this? Nut butter is food from the gods. I actually had to wean myself off eating tubs of the stuff! I add nut butter to all my energy balls, gorge with greek yogurt, on toast with banana or as we know straight from the jar.

#10 Raspberries/Blueberries

Not just because they’re full of antioxidants but they are so bloody tasty. As you can see with this list of ingredients most work great together. Oats are no longer boring when topped with fresh berries, greek yogurt turns into a dashing dessert with berries and what are pancakes without berries?

Some miscellaneous items I always have too: Protein, coconut oil, maple syrup, Kerrygold butter, pink Himalayan salt.

Gluten Free Recipes with BFree Foods

I use Bfree products regularly, especially the pitta breads and the chia wraps. The macros on the wraps are really good and are lighter than regular wraps which appeals to me, so I was delighted when BFree sent me some products to sample. I wanted to get as creative as possible because let’s face it, there’s not an awful lot you can do with wraps, is there? Here’s a few fun recipes I made using the products, I hope you enjoy!

Fajita Wraps

I usually wouldn’t buy this type of box as I always make my own from scratch. It was fun to  try it and the instructions were super easy, perfect for busy families. The box comes with wraps, seasoning and salsa and all you need to add is chicken (or chickpeas for veggies) peppers and a red onion.

The taste was lovely but I found the seasoning a little on the sweet side and this is probably down to sugar being the first ingredient on the list. Hopefully that could be altered in the future. They have a lovely smokey flavor which I love and they went down really well in this house!

Tortilla Chips

This is my go to snack recipe if I’m watching a movie or craving something savory! It’s super easy to make (I say that a lot don’t I) But it’s true it can be made within 5-6 mins max!

Ingredients:

  • 1 BFree wrap cut into triangles
  • olive oil
  • paprika
  • salt/pepper

Method:

  1. Brush the triangles with oil.
  2. Season with the paprika and salt/pepper, rub on both sides.
  3. Bake for 4-5 mins until brown and crispy.
  4. Leave aside to crisp and serve up with guac or hummus!

Cinnamon French Toast Wrap

This was a fun idea that just popped into my head. French toast was my ultimate weekend food when I was younger, I just loved it! Even now when I see it on a menu my inner child jumps out of her seat. It’s also not the healthiest foods on the planet so I figured this would be a lighter version! You could say it’s like a french toast/pancake hybrid so two of the best brunch options.

Ingredients:

  • 1 Bfree wrap per person
  • 2  eggs
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 tsp maple syrup
  • Optional topping and fillings; banana, strawberries, blueberries, maple syrup, nut butter, shredded coconut and chia jam-Get creative!

Method

  1. Heat a large pan (I use a crepe pan) over medium.
  2. Whisk eggs, vanilla, cinnamon and maple syrup together in a large bowl.
  3. Dip the wrap in the mixture, ensuring it is completely covered.
  4. Melt some coconut oil/butter in the pan. Then cook the wrap for about 2-4 minutes on each side.
  5. Get creative with the toppings/fillings.Roll up your wrap and cut in half, if desired.
  6. I made some blueberry chia jam for the topping and added shredded coconut and bee pollen.

Breakfast/Snack Sushi

It’s the perfect snack for the kids (or big kids!) it can be added to their lunch box for a nutritious snack. For you fitness fanatics it makes a great pre/post workout snack or it can be a good excuse to practice your chopsticks skills!

Ingredients:

  • 1 BFree wrap
  • 1 banana
  • 1-2 tbsp peanut butter
  • sprinkle of cinnamon
  • 2 tbsp maple syrup for dipping

Method

  1. Spread peanut butter over one side of the wrap.
  2. Sprinkle with cinnamon.
  3. Place the banana at one end of the wrap and roll the tortilla over and over again until you have a tight circular shape.
  4. It’s ok if the banana doesn’t go right to the end of the wrap, cut off the ends and you can eat them as you go!
  5. Slice the wrap using a very sharp knife into even sized pieces.
  6. Dip in maple syrup and enjoy.

What You See Is What You Get…

Have you ever looked at someone else and wished to be like them? Looked at how they work a crowd, how successful they are or even how fit? In some cases people change their true selves just to impress people, to fit in and hope that they’ll be liked in return! What is wrong with the human way that we struggle so much to be confident in who we are?

Take me for example, what you see is what you get! I’m a no nonsense, honest person who sees the best in everyone, but this has ended with some negative situations over the years! In the past I struggled to speak my mind, I always wanted to be “that person” who would tell people where to go or how I don’t agree with their views etc. I mean I could play out the whole conversation in my head and when it came to it? SILENCE! I’d get so frustrated, why should I give the power to someone else, I’m a strong individual myself! I had friends who could stand up for their beliefs and to be honest most people thought I was like that, It wasn’t that I lacked confidence, I just couldn’t face the confrontation!

Over the years I’ve gotten better, I guess that’s normal with age too! Mr. Piggy has helped inspire me on so many occasions and standing up for yourself feels so good! But why do we have to? Why should we feel bad because of someone else’s instability? We shouldn’t! It’s time to love and accept ourselves and stand up for our own beliefs, even if it means stepping outside of your comfort zone! I promise you, it will feel good!

Life has many ups and downs and this is something I have experienced closely over the last few months. There will be tough days, even tears but all these difficult experiences make us stronger in time! It’s these times that will help us understand who we are and what we want in our lives!

Zesty Coconut Turkey Fillets

An old recipe of mine which I designed in 2013 for Boxrox.com, I’d like to think my photography skills have improved since then LOL!

Turkey is not just for Christmas you know!! A favourite of fitness fanatics for decades, there is a solid reason for this!

  • There is about 32g of protein in a 4-oz. serving of turkey, making it a very good source of these essential amino acids. Just one serving of turkey provides 65 percent of your recommended daily intake of protein.
  • Considered a good source of vitamins B3 and B6, rated because of the density of these vitamins in the meat. A serving of turkey meat has 36 percent of the daily allowance of B3 and 27 percent of your recommended intake.
  • Turkey is believed to have mood enhancing properties. It contains tryptothan, which produces serotonin, a neurotransmitter that helps improve your mood.
  • Light, skinless roasted turkey is low on saturated fat and total fat. It also contains less cholesterol than chicken, pork or beef.

Honey & Lime/Coconut Turkey Fillets

Ingredients (Serves 2)

  • 2 turkey steaks
  • 1 egg
  • 1/4 cup of shredded coconut
  • 1/4 cup of coconut flour
  • 2-4 pieces streaky bacon (optional)
  • 1 packet long stem broccoli
  • 1 pok choi
  • 1 garlic clove crushed
  • 2 tbsp soy sauce/coconut aminos
  • olive oil
  • paprika/salt/pepper

Method:

1. Preheat oven to 180

2. In a bowl mix the egg and lime juice until combined. On a chopping board spread out the coconut ingredients & season with paprika, salt & pepper.

3. Take the Turkey Steak and dip in the egg mix and then coat it in the coconut. Do this to both steaks until evenly coated. Place the Steaks in a glass baking dish and bake for about 15 mins (turn in between) and cook until golden.

4. While the Turkey is cooking, add some olive oil to a hot pan and quickly fry the pak choi & broccoli with garlic and soy sauce/coconut aminos (cook the bacon now if you include it)

5. When the turkey is ready you are ready to plate up, I added some avocado for extra health benefits.
